MINI CRUSTLESS CHEESECAKES

yields 6-8 servings. Calories unknown (and not cared about)

Crustless cheesecake? What is this foolishness? Delicious foolishness I say! And it's a simple recipe!

What you need:
  • Jell-O No Bake Dessert (you can opt for plain. I decided on the strawberry filling)
  • 1 cup of cold milk (soy/almond milk can be used, but it will be have a softer consistency than using cows milk).
  1. Combine cheesecake mix and milk in a medium size bowl and mix on low for 30 seconds.
  2. With a spatula, pour mix into each cupcake holders.
  3. If you're using filling, use a spoon to put on top of the mix. You may have some leftover. Just
throw it in the freezer for later use.
  4. Place in the fridge for 12 hours (Note: you can eat it after an hour, but the colder it is, the more it will stay together).
  5. ENJOY!
