GREEN BEAN SALAD FROM BHG (REVIEW)

I saw a fun alternative to the normal "lettuce" salad because let's face it, one could get burned out no matter the type and as silly as it sounds, I feel like I'm a rabbit when eating iceberg lettuce. Weird but it's true.

When flipping through the August issue of BHG (Better Homes and Garden) I saw this alternative and thought, "let's give it a shot."

It's simple, inexpensive and friendly to a lot of diets (Dairy Free, Wheat Free, Gluten Free, Vegetarian, Vegan, etc).

Here's what you need:

  1. One medium sweet onion, sliced
  2. 1 tbsp olive oil
  3. 1lb green beans (or one frozen bag)*
  4. 1 tsp snipped fresh rosemary
  5. 2 peaches or nectarines (I used half a bag of frozen peaches)*
  6. 1 clove of garlic, minced (if you buy the jar, 1/2 teaspoon is equivalent to 1 clove)
  7. 1 Tbsp of lime juice


  • If using frozen peaches, soak them in lukewarm water and set them aside at room temperature. 
  • Next, rinse the green beans to soften them (again if you're using frozen). If you're using fresh, simply wash and cut in half. 
  • Add green beans, garlic, rosemary, in a mixing bowl. Get your hands dirty and mix it together. You can add salt if you like or leave it out.
  • Heat medium skillet on medium to medium high adding the olive oil. Saute onions until soft (this should five minutes give or take). Add green bean mixture, stir, and cover for five minutes or until green beans are soft. 
  • Drain water from peaches, and add lime juice. 
  • Once green beans are cooked, combine with peaches and mix together
  • Serve warm or place in the fridge to cool

REVIEW:
It was tasty. The combination of the warm green beans and still cool peaches made the food interesting. It was a great balance without it being too much. It wasn't too sweet or too salty and I could add a little bit of salt or a splash of lime juice to add more punch without taking away from the overall taste.

Next time I'll add some lean protein (chicken) and some kind of crispy topping. It's great as a meal on its own, appetizer or side dish. I'll make this again.
