OATMEAL PANCAKES
I woke up one morning wanting something different than my usual oatmeal in a bowl, so obviously oatmeal pancakes were the answer.
Since I'm still staying away from animal products, I had to think how I could make pancakes without eggs or milk but it wasn't hard to come up with something after some brainstorming and researching.
You'll need:
1/3 cup gf oats (I usually use Bob Mills Quick Oats)
1/3 cup liquid (water, almond or soy milk)
2 teaspoons sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
dash of salt
Any fruit you want.
Make your oats into flour by putting them in the blender on high. How long it takes depends on your on your blender but it shouldn't be more than a minute or two, respectively. It doesn't have to super fine, just finer than the oats you started with.
Notice there's still some full size oats. It's fine.
In the meantime, heat skillet on medium low using nonstick spray (I like coconut oil spray from Trader Joe's).
Once blended, mix everything else but your fruit in. I used vanilla almond milk for some added sweetness.
Fold your fruit in with mix (I used blueberries). It will sort of look like porridge before you cook it.
Pour mixture into skillet and allow it to cook until the bubbles pop (like a "regular" pancake). Be careful when you flip to make sure it doesn't fall apart.
Cook on the other side then remove to a plate when finished.
The recipe makes 3-4 medium pancakes.
