MEALS TO TRY

Happy Monday!

I started food prep for the week as a way to help me eat better this year. When I need ideas, I hit the Internet to look for something a bit different than my normal taco soup. Thank God for Pinterest (follow me here) because there's some great ideas I've pinned that I'm going to try this month.

1. Cheesy Leftover Mashed Potatoes

I might alter and eliminate some of the ingredients (like sour cream. I'm personally not a fan) but this is amazing. I usually don't have leftover mashed potatoes because they're one of my top 5 favorite foods, but I love this easy twist to them.

2.  Turkey Meatball Soup with Greens

I'm going to do tofu meatballs instead (though the turkey meatballs look amazing) and I'm probably going to mix kale with collard greens or just nix the kale. Basically, this is just an idea for a new recipe.

3. Cauliflower 'Bread'

Cauliflower is a vegetable I've grown to love because you can season it anyway you want and it holds flavor really well. I should probably cook this for a get together because I can see myself eating this and only this by myself.

4. Fresh Summer Rolls w/Basil, Avocado, Kale and Spicy Garlic Peanut Sauce

There's that kale again so maybe it's in the cards for me to give it another shot. Besides, this looks amazing and I've been craving spring rolls from Clay Pot (shout out to Waco, Texas) for a while. This is raw, so none of the ingredients you have to cook and in all honesty, I don't see why you would. Can't wait to find some gluten free rice paper to make this (but rice paper should be gluten free naturally, right?).

I'm excited to try these. I'll definitely post the outcome on Instagram and blog a quick update.
